In keeping with the pastel trend that’s dominating the streets, stores and of course the blogosphere I baked some scrumptious Easter cupcakes and decorated them in soft shades of pink and yellow. Fashion meets Food! Me likey…

Ingredients:

Cupcakes: 225g unsalted butter, softened. 225g caster sugar. 225g self-raising flour. 1tsp baking powder. 4 eggs. 1 tsp vanilla essence. Icing: 1 cup icing sugar. 1tbs butter. Milk (if needed). Food colouring. Decorations such as chocolate eggs or sprinkles, I used pastel coloured M&M’s.

Preheat oven to 175 degres.

Place all ingredients in a medium bowl and beat with electric mixer until smooth

Spoon Mixture into cases and bake for 20 minutes

Cool for an hour, top with icing and decorate as you like
