Spaghetti with Anchovies and Zucchini

Ingredients: One large Zucchini, sliced. One clove of Garlic, sliced. One small jar of Anchovies (75g). One small red Chilli, chopped. One handful of Parsley, chopped. Spaghetti. Olive Oil.

Cook the pasta. Pan fry the Zucchini and Garlic in some good quality Olive oil on low heat.

Once the Zucchini has softened (5-8 minutes), add the Anchovies which should melt into the pan.

Drain the pasta, then add to the pan. Stir through the Chilli and Parsley.

Add some more Olive oil. Cook for another 2 minutes allowing all the flavours to blend together. Season to taste.
