With Winter only a couple of weeks away (eek) it’s started me thinking about the things I’d most like to accomplish/do over the next few months. Melbourne is one of the few Australian cities that experiences real seasons, and even though I’m a total beach bunny, I must admit I do love me some winter fashions, hearty winter meals and cuddling up by a fire with a glass of red in hand.

Soooo.. never one to back away from a To Do list below are my Ten Winter Adventures for 2012!

1. Host a Christmas in July soiree
2. Take a long weekend and head up to Falls Creek for some fun in the snow
3. Complete the July 30 Day Yoga Challenge for a second time
4. Take a road trip to Bendigo and attend the Grace Kelly exhibition
5. Start Italian Lessons 
6. Make chutney and give as gifts at my Christmas in July soiree (see above) 
7. Take a fashion sketching class
8. Volunteer more
9. Take husband on a fabulous Birthday holiday 
10. Visit Johanna Beach in Winter (husband and I have visited every year since we met:) see below… stunning isn’t it???)

Chocolate coated Oranges

Ingredients: 2 oranges. 250g caster sugar. 100g good-quality dark chocolate.Quarter each orange and pull the flesh away from the skin. Use a sharp knife to remove any excess white pith from the skin (or the sweets will be bitter). Cut the peel into 0.5cm-wide strips.Place the peel in a heatproof bowl and cover with boiling water. Leave for 5 minutes, drain, then repeat twice more. Drain well.Place 1 cup (250ml) cold water in a saucepan with the sugar, stirring over low heat until sugar dissolves. Add peel and simmer for 10 minutes, by which time the peel should look translucent.Place on a wire rack over a tray, cover loosely with foil and leave at room temperature overnight.Melt the chocolate in a heatproof bowl over simmering watering, making sure bowl does not touch water.Cool slightly, then dip half of each orange peel strip in chocolate.Place on a tray until chocolate hardens.Enjoy..

Jamie Oliver’s Fish Pie

Ingredients: 500g potatoes, boiled and mashed. 1 carrot, grated. 1 celery stick, grated. 50g of Cheddar cheese, grated. 1/2 lemon, grated zest and juice. 1/4 fresh chilli, coarsely chopped. Handful of parsley, chopped. 400g Salmon fillets, skin off, diced. A handful of freshly podded peas. Olive oil. Salt & Pepper. Pre heat oven to 200 deg. Bring a pot of salted water to the boil, add potatoes and cook for about 12 minutes.  Divide grated carrot, celery, cheddar and lemon zest between 2 pie dishes. Add chopped parsley and chilli to each dishDivide Salmon and peas between both dishes, drizzle with olive oil and lemon juice and  season with salt and pepper. Mash the potatoes with some olive oil.Divide the mash between both dishes and place in preheated oven for about 20 minutes and serve with a rocket salad

These Molten Chocolate Puddings are a dinner party favourite! The gooey centre makes them a hit with young and old(er) guests alike

Ingredients: 150g dark chocolate. 100g unsalted butter. 2 eggs. 2 egg yolks. 1/4 cup caster sugar. 2 tbsp plain flour, sifted. double cream to serve. Makes 4

Preheat oven to 180 deg. Place the chocolate and butter in a saucepan over low heat and stir until the chocolate is melted and smooth

Place the eggs, yolks and sugar in a bowl and mix until pale

Gently fold in the chocolate

and sifted flour

Divide between four 1 cup capacity ovenproof dishes

Bake for 12-15 minutes and top with double cream to serve
